FenixBootstrapper was running alongside PMDG.

The Fenix A320 bootstrapper runs as a background process and maintains a SimConnect connection even when you're not flying the Fenix. If Add-on Linker had your Fenix package enabled for this profile, its background process was actively competing for SimConnect resources while you flew the PMDG 737. This kind of cross-aircraft SimConnect conflict is a well-documented cause of mid-flight crashes.
